Requires students to safely and hygienically prepare, cook, and serve menu items, and complete a minimum of 48 full service periods in a commercial kitchen across breakfast, lunch, and dinner service types.

To successfully complete this qualification, all students must undertake and complete their Work-Based Training (WBT) placement. Students must complete mandatory workplace tasks linked to the core unit SITHCCC043 – Work effectively as a cook, which requires completing a minimum of 48 full service periods in a commercial kitchen, covering a combination of breakfast, lunch, and dinner service types.
You will master creating and controlling high-quality dishes, stock management and menu planning, costing and financial management for kitchens, leading and motivating kitchen teams, managing people and day-to-day operations, sustainable and safe work practices, food hygiene, safety, OHS, and first aid essentials, as well as advanced food preparation and presentation skills.
Applicants must meet one of the following English language proficiency requirements: a minimum IELTS (General) test score of 6.0 or equivalent (results older than two years are not acceptable); evidence of at least two years of study in English in Australia, Canada, New Zealand, Republic of Ireland, South Africa, United Kingdom, or United States; or evidence of successfully completing in Australia a foundation course, Secondary Certificate of Education, or a substantial part of a Certificate IV or higher-level AQF qualification within two years of their signed written agreement date.
The Certificate IV in Kitchen Management (SIT40521) has a duration of 78 weeks, with intakes available every 4 weeks.
This qualification provides a pathway to work in organisations such as restaurants, hotels, clubs, pubs, cafes and coffee shops, or to run a small business in these sectors. Possible job titles include chef and chef de partie.
