Common Questions
For on-campus students with vocational placement, the course is delivered over 78 weeks full time (two days per week plus industry placement). However, as it is competency based, it may be possible for learners to complete their training sooner if they have reached the required skill level. For apprentices, the duration is 3 years full time or 6 years part time as per a Queensland registered training contract.
Yes. Work/industry placement is the responsibility of the student to coordinate. Where a student is not a Queensland registered apprentice or employed within this industry, work within industry will need to be organised to meet the requirements of SITHCCC043 (48 services). For on-campus students, practical skills will be demonstrated in CQUniversity's Training Kitchen and will form some of the required 48 service periods, with placement within industry required to complete the remaining service periods.
The Certificate III in Commercial Cookery is available on campus at Mackay City and Rockhampton City, with an intake commencing in February 2026.
CQUniversity requires completion of the bksb (Basic Key Skills Builder) online literacy, numeracy and digital literacy assessment prior to enrolment, unless the student has completed an equal or higher-level course. Students undertaking on-campus delivery must be working within industry (paid or voluntary) for their practical assessment sign off and required 48 kitchen services, with an industry supervisor who has a relevant qualification or experience of at least 3 years. Students also need access to a computer with internet and a basic level of computer skills.
The Certificate III in Commercial Cookery provides a pathway to work as a cook in organisations such as restaurants, hotels, clubs, pubs, cafes, and coffee shops. Completion of this qualification also contributes to recognition as a trade cook.
