This course includes 2 days a week for 10 weeks in an Academia affiliated Hotel commercial kitchen. All workplace partners are at a short distance from the Institute, and Academia arranges the practical placement for its students in some of Melbourne or Brisbane's best hotels, including Grand Hyatt Melbourne, The Langham Hotel, The Westin Melbourne, Park Hyatt Melbourne, Four Points Hotel by Sheraton, Westin Hotel Brisbane, Sofitel Hotel Brisbane, W Hotel Brisbane, and OTTO Restaurant Brisbane, among others.
To achieve the Certificate IV in Kitchen Management you must complete 27 core units and 6 electives. The electives have been selected by Academia to be relevant to the work outcome for this qualification.
This course is delivered face-to-face, through a combination of tutorials and workshops. You will be assessed through written tests, computer-based tasks, and assignments. Equipment includes fully equipped designated computer areas, training kitchens, demonstration kitchens, student PCs, printed and online resources, spacious classrooms, and free internet access.
The Certificate IV in Kitchen Management is 79 weeks registered on CRICOS, including tuition and course breaks. It is available at both the Melbourne Campus (399 Lonsdale Street, Melbourne VIC 3000) and the Brisbane Campus (41 Raff Street, Spring Hill QLD 4000).
After the successful completion of this course, you can enter the SIT50422 Diploma of Hospitality Management (Commercial Cookery Stream), which can then lead to the SIT60322 Advanced Diploma of Hospitality Management.
