The course runs for 52 weeks in total, which includes 40 teaching weeks plus 12 weeks of holidays.
Classroom training is delivered at Aventia Institute, Level 3, 57 Sanders Street, Upper Mount Gravatt, QLD 4122. Practical face-to-face training is provided in a commercial kitchen at Vanilla Zulu, 92 Commercial Road, Teneriffe, Brisbane, QLD 4005. A work placement is also required as part of the program.
Students are required to have an IELTS Overall score of 6.0 or equivalent (test results must be no more than 2 years old). Lower scores may be accepted if packaged with ELICOS: an IELTS of 5.5 with at least 10 weeks' ELICOS, or an IELTS of 5.0 with at least 20 weeks' ELICOS. Other tests such as PTE and TOEFL are also accepted if equivalent to IELTS 6.0. English proficiency may also be demonstrated through five years of education in an English-speaking country, completion of a foundation course in Australia, or the College English Placement Test, among other options.
Students must complete a total of 25 units, comprising 20 core units and 5 elective units. The elective units are listed in the Aventia course brochure.
Students who complete this course may wish to continue their education into a range of Certificate IV qualifications, such as the SIT40521 Certificate IV in Kitchen Management. Completion of this qualification also contributes to recognition as a trade cook, with employment pathways in restaurants, hotels, clubs, pubs, cafes, and coffee shops.
