Certificate III in Commercial Cookery

The Certificate III in Commercial Cookery (SIT30821) reflects the role of commercial cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items, working with discretion and judgement under limited supervision. Delivered by Veritas Institute Australia in Geelong, the course lays the foundations of restaurant cookery, knife skills, food safety practice and menu preparation, while also building financial, team and kitchen management skills so graduates can help run a busy commercial kitchen. Training is face-to-face for a minimum of 20 hours per week, combined with work-based training of 48 complete food service periods (192 hours) in a commercial kitchen. The course runs over 52 weeks in total, made up of 43 weeks of face-to-face training and assessment plus 9 weeks of term breaks and holidays, in addition to the work placement. It provides a direct pathway into employment as a qualified cook in restaurants, hotels, clubs, pubs, cafés and coffee shops, and can lead on to further study such as the Certificate IV in Kitchen Management. No licensing, legislative or certification requirements apply to this qualification at the time of publication.
