Certificate III in Commercial Cookery (SIT30821) is delivered by JMDEDU PTY LTD, trading as Wyndham International College (RTO 46144, CRICOS 04222J), with classroom training at its Tottenham campus and practical kitchen sessions at its North Melbourne campus.

This qualification reflects the role of cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items. Using discretion and judgement, they work with some independence and under limited supervision, following plans, policies and procedures to guide their work activities. Completion of this qualification contributes to recognition as a trade cook.

The course provides a pathway to work as a cook in restaurants, hotels, clubs, pubs, cafes and coffee shops, and covers the fundamentals of restaurant cooking, knife skills and food safety procedures, alongside financial, team and kitchen management skills.

Delivered over 52 weeks (inclusive of 8 weeks of holidays and 10 weeks of work placement), with classroom sessions of 20 hours per week. Graduates may progress into the Certificate IV in Kitchen Management (SIT40521).
