Certificate III in Patisserie

The SIT31021 Certificate III in Patisserie is an AQF Level 3 qualification delivered by Bentley College face-to-face for 20 hours per week over 52 weeks (44 study weeks plus 8 weeks of break). The course comprises 22 units of competency — 17 core and 5 elective — developing practical patisserie skills including using food preparation equipment, basic cookery methods, and cookery fundamentals, through to producing cakes, gateaux, torten, pastries, yeast-based bakery products, petits fours and desserts, together with kitchen hygiene, food safety and workplace safety practices. As part of the course, students complete a minimum of 120 hours of unpaid work placement — either 30 shifts of 4 hours or 15 shifts of 8 hours — in a hospitality setting, gaining genuine industry experience alongside classroom learning. The course suits learners seeking a practical, hands-on entry qualification into the patisserie trade. Entry requires English proficiency at IELTS 6.0 or equivalent (or completion of Advanced-level English studies), sound digital literacy, and completion of Australian Year 12 or equivalent. On completion, graduates are prepared for employment in hospitality settings where patisserie products are prepared and served, including patisseries, restaurants, hotels, catering operations, clubs, pubs, cafés and coffee shops.
