The course duration is 78 weeks in total, comprising 66 weeks of tuition and 12 weeks of term breaks. It is designed to be delivered in 6 terms at 20 hours per week through blended learning, combining face-to-face classroom sessions and practical kitchen sessions.
Students are required to complete 360 hours of work placement in a commercial kitchen. This includes working as a cook for 48 complete food service periods covering breakfast, lunch and dinner, and planning cooking operations for 12 food service periods. A work placement logbook is used to record worked hours and service periods. New Era Institute has a network of workplaces for students to complete their placement, and students already working in the hospitality sector may use their existing workplace provided it meets the requirements.
Classroom sessions are held at the Windsor campus located at Suite 13 & 14, 100 George Street, Windsor NSW 2756. Practical kitchen sessions take place at the New Era Institute kitchen facility located at Suite 203, Level 2, 118 Church Street, Parramatta NSW 2150.
International students must have evidence of English language competency at IELTS 6.0 or equivalent. They must also be 18 years of age or over and meet the Student Visa (Sub-class 500) requirements.
After achieving the SIT40521 Certificate IV in Kitchen Management, students may progress to the SIT50422 Diploma of Hospitality Management. Students who do not complete the full qualification may receive a Statement of Attainment for units successfully completed.
