Students must complete a minimum of 48 sessions (144 hours) of work placement in an operational commercial kitchen during their studies. Students will be given an option to select their own workplace providing the workplace meets the Institute requirements, and the Institute will arrange the workplace for all other students to complete their work-based training.
Students are required to purchase a Chef's Uniform, Toolkit, and Safety boots. Prescribed textbooks, workbooks, and printed materials are also required.
Yes. Students who have completed SIT30821 - Certificate III in Commercial Cookery will be able to complete the Certificate IV in Kitchen Management course within 40 weeks, compared to the standard duration of 100 weeks (including course breaks).
International students must meet one of the following English language requirements: Cert III in EAL or Academic IELTS band score of 5.5 or equivalent; satisfactorily completed ELICOS at at least Upper Intermediate level; completed the equivalent of Australian Year 11 from an English-speaking country such as Australia, UK, USA, Canada, New Zealand, South Africa, or the Republic of Ireland; completion of any Australian AQF Certificate III or higher qualification; satisfactorily completed at least one semester of study in Australia in a tertiary course (50% or more of the semester load); or completed a Placement Test devised and administered by VIT or a nominated accredited agency.
Graduates can pursue roles such as chef, chef de partie, Kitchen Manager, Food and Beverage Supervisor, or Catering Manager in organisations such as restaurants, hotels, clubs, pubs, cafes and coffee shops, or run a small business in these sectors. After achieving the Certificate IV in Kitchen Management, individuals could also progress to the Diploma of Hospitality Management or other Diploma qualifications within the Hospitality training package.
