International students must complete Certificate III in Commercial Cookery prior to commencing this course.
The course runs for 52 weeks in total. Semester 1 (21 weeks) is spent undertaking tuition on campus in a purpose-built training kitchen and classroom facilities, with 21 hours of on-campus classes per week. Semester 2 (20 weeks) is an Industry Placement semester where there are no on-campus classes and students work entirely in the workplace developing their skills and building industry contacts. There are also 11 weeks of holidays.
If you are offered employment for your Industry Placement, you will receive a minimum of AUD$17 per hour, and you can work for up to 49 hours per week.
A total of 33 units must be completed: 27 core units and 6 elective units, consisting of 3 units from Group A and 3 units from the electives listed or from any current endorsed Training Package or accredited course.
This Certificate IV in Kitchen Management qualification provides a pathway to work in organisations such as restaurants, hotels, clubs, pubs, cafes and coffee shops, or to run a small business in these sectors.
