Diploma of Hospitality Management

The SIT50422 Diploma of Hospitality Management at Victorian College of Education Australia (VCEA) reflects the role of highly skilled senior operators who use a broad range of hospitality skills combined with managerial skills and sound knowledge of industry to coordinate hospitality operations. Graduates operate independently, have responsibility for others and make a range of operational business decisions. The course provides the skills and knowledge to work in any hospitality industry sector as a departmental or small business manager, across a diverse range of employers including restaurants, hotels, motels, catering operations, clubs, pubs, cafés and coffee shops, and allows for multiskilling and for acquiring targeted skills in accommodation services, cookery, food and beverage and gaming. The qualification requires 28 units — 11 core units and 17 electives — combining practical cookery and food safety units with management units covering conflict management, managing finances within a budget, preparing and monitoring budgets, leading and managing people, rostering staff, monitoring work operations, developing and managing quality customer service practices, establishing business relationships and identifying and managing legal risks.

Training is conducted in the classroom and in commercial kitchen settings that simulate a real work environment, including face-to-face teaching, lectures, discussions, research, learning activities, group work and supervised practical sessions, with assessment by written assignments and project work, case studies and practical demonstration. The course runs for 72 weeks full time including holidays and orientation; students who have completed the SIT40521 Certificate IV in Kitchen Management at VCEA need study only 16 weeks. It is delivered at the Queen Street campus in Melbourne with practical sessions at the VCEA Kitchen in West Melbourne. Tuition is $22,900, plus a $450 non-refundable enrolment fee, a $2,200 materials fee and $400 for a chef uniform and knife kit. Graduates can progress to the Advanced Diploma of Hospitality Management or to higher education qualifications in management.
