About This Course

The Graduate Diploma in Viticulture and Oenology places you in Australia's wine country, with practical experience in the field supported by state-of-the-art laboratories, vineyards and wineries at the Waite Campus — where Adelaide University says 70% of Australia's wine research is conducted.
The program emphasises technical expertise and sensory (wine tasting) skills. You study how grapevines grow, from bud burst through to flower and fruit development, and how to optimise vineyard yield and grape quality.
Winemaking is covered end to end, from grape composition onwards, including the principles and practices of wine clarification and stabilisation. You also investigate trends in precision viticulture, and cover key areas across viticultural science, sensory studies and winemaking.
Hands-on skills are built in local vineyards and wineries, and you connect with more than 150 local industry leaders and researchers, working in world-class facilities including a wine science laboratory.
The program is 48 units of core courses, taken full time over one year at the Waite Campus, with a July intake.
