Master of Viticulture and Oenology

The Master of Viticulture and Oenology is underpinned by a strong fundamental scientific background, with a hands-on approach that builds your ability to implement progressive, scientific-based approaches to grape and wine production.
The program emphasises the key technical methods used across viticulture and winemaking, blending science and technological skills to show how vineyards and wineries operate. You explore trends in precision viticulture through advanced technologies, with an emphasis on sustainability and adaptation to climate change, and can advocate for organic and biodynamic cultivation.
Study takes place at the Waite Campus, where the university says 70% of Australia's wine research is conducted, within the Southern Hemisphere's largest agricultural teaching and research hub. You make wine in a state-of-the-art wine science laboratory and collaborate with more than 150 researchers and industry partners in grape and wine science.
The degree is framed around a global wine industry adapting to environmental, technological and consumer challenges.
The program totals 96 units — 54 units of core courses, 12 to 24 units of discipline courses and 18 to 30 units of electives — over two years at the Waite Campus, with a July intake.
